It’s Monday morning and I don’t know about you but I am just not feeling it. Inspired by Tanya Burr’s Triple Chocolate Cookies recipe, I am hoping that my chocolate cookie recipe will make your day a lot brighter! The best thing is that they are super quick and easy to make, suitable for vegans without any of the weird ingredients and taste delicious.
200g vegan butter
300g caster sugar
1/4 cup of vegetable oil
275g self raising flour
75g cocoa powder
a dash of hazelnut milk
200g of dark chocolate
1. Preheat the oven to 200°C. Line two large tins with baking paper or foil however I greased the tins with some butter and that worked just the same.
2. Whizz together your butter and sugar until the consistency is smooth. Add the vegetable oil and dry ingredients and blend together. If it is looking a bit dry add a dash of hazelnut milk.
3. Break the squares of chocolate and mix into the mixture. Use your hands to separate the mixture into 10-12 blobs. Pop them in the oven for 10-11 minutes.
4. Take them out the oven at 11 minutes. They will not look cooked but don’t leave them in for longer because they will be hard and overcooked, no one wants that! Leave them to cool for about 30 minutes. I made my dinner in this time but you could dance around the kitchen to your favourite playlist like what I usually do.
