It’s pancake day tomorrow!! It’s always been an important day in my household. It’s also a day that you can eat pancakes for breakfast, lunch and dinner and no one can judge you. The best thing is that you can even enjoy pancake day when your vegan too. I thought I would share with you a recipe that I found on the Internet a couple of weeks ago that actually makes them taste like normal pancakes.
1 1/4 cups of plain or all purpose flour
2 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 1/4 cups of water
1 tbsp oil
1. Sift the flour, sugar, baking powder and salt into a large bowl. Whisk the water and oil together in a separate bowl.
2. Make a well in the centre of the dry ingredients and pour in the wet ingredients. Stir until blended. If the mixture is a bit lumpy don’t worry because it’s meant to be.
3. Heat a little oil over a medium – high heat. Drop the batter by large spoonfuls into the pan and cook until bubbles form and the edges are dry. Flip and cook until golden on the other side. Repeat this step with the remaining batter.
Serve them up with your favourite vegan friendly toppings. I had Banana and Golden Syrup however some of my other favourites included: Strawberries, Vegan Marshmallows and Choc Shot, Lemon and Sugar, Alpro yogurt or even some dairy free cheese. It’s definitely not one of the healthiest starts to the day but give yourself a treat!
